During the pandemic I have experienced seven virtual food tours, most of them excellent, but our class with Chef Eduardo topped them all. Yesterday we tuned in on eight screens from locations across Western Canada to celebrate my daughter-in-law's birthday. She had selected a menu of chicken mole and a mezcal cocktail from an interesting list provided. It was a great choice! Eduardo is so engaging; funny, energetic, and well-informed. As a trained chef, he provided tips that were helpful to even the most seasoned cooks among us. The food was absolutely delicious, with plenty of left-over mole sauce. Eduardo gave us intriguing ideas on how to use the mole in other dishes, which I can't wait to try. I suspect we'll be recreating the berry cocktail when we do. Virtual cooking classes have been a fantastic way to bring everyone together during the pandemic. We cook together, then we eat together virtually. I suspect we'll continue that practice once COVID-19 is in our rearview mirror --- and we'll certainly take another class with Eduardo when we get to Mexico City in person.

I booked this class for me and my husband to celebrate our anniversary, since we were stuck at home our kids. What a fun and engaging class with Chef Eduardo! He even improvised on the spot to help us make a cocktail to celebrate. He provided sufficient time for us to follow along and motivated us to be confident with our cooking skills. He also shared with us the some of the cultural meaning and practices that came with the making of Mexican salsas and tortillas. I can’t wait to try another class and continue learning.
