This is not your typical Italian cooking class. This is a chance to immerse yourself in a private cooking class with a delightful man passionate about regional Italian cuisine and share an authentic meal with a couple that has been married for 30 years and are still crazy in love!
Fabio lives on a hill in the countryside surrounded by olive trees. Fabio and Christiane (when she is home) welcome you into their colorful home with a refreshing drink. Fabio will explain how they pick olives and how olive oil is made. Next, join Fabio in his kitchen for a 2.5 hour hands-on cooking class. Learn to make fresh pasta, sauce, a main and dessert. Depending on the season, you might help Fabio make tagliatelle con ragù or squid risotto with wild fennel and orange peel, and cod with leeks and purple cabbage or pork chop with almonds. For dessert, enjoy castagnaccio, chestnut flour cake, a regional favorite or panna cotta with strawberry coulis in the summer over a pot of freshly brewed coffee.

My wife and I had a tremendous experience in participating in Fabio’s cooking experience. Fabio and his wife hosted us in their wonderful countryside home outside of Florence for not only a great cooking lesson but a great visit and an opportunity to learn so much more about Italy and Florence. We participated in a hands-on preparation of a great Florentine seafood meal and enjoyed the meal at their beautiful dinner table.
Fabio was a great teacher, with detailed explanations of the thoughts behind the recipe, the process of choosing and preparing the ingredients and a thorough review of how and why he carried out each step of the meal. We participated in all aspects of the meal preparation and cooking the meal, including a delicious dessert. They utilized ingredients from their own property, including homemade Extra Virgin Olive Oil from olive trees on the property, as well plum and cherry jam from trees on their property. Their enthusiasm for our visit, their ability to place us at ease very quickly in their home and his willingness to pick us up in downtown Florence and return us made it a truly memorable night- not just as a cooking experience, but as a visit with new friends.
We would strongly recommend this cooking experience. While our visit was just my wife and I, they can host groups of up to 6-7 people. The hidden gem of this visit was the amazing views from the road up to their home on the hills outside of Florence. You get the chance to look down on the whole city and get great pictures of the city as well as a great explanation of the layout of the city. We cannot thank Fabio and his wife enough for a beautiful night.

I had a divine experience with Fabio and his warm and welcoming wife.Fabio and I had discussed prior to my arrival what I wanted to prepare .He was a wonderful teacher and taught me and my partner so much about the Italian cuisine and the small but quite important elements to the Italian cuisine .The kitchen atmosphere and panoramic views were a delight and then dining on our completed dishes was truly a dream come true! Very Dolce Vita!!!Grazie for a true highlight culinary experience .I naturally can only highly recommend this experience.You will not be disappointed but inspired.

My wife and I just back from our honeymoon in Italy. We visited Rome, Florence, Venice and Milan. We took this cooking class with Fabio our first day in Florence, and it was so much fun! It was one of best things we did. Fabio is a great chef that lets you do as much or as little of the cooking as you want. We did somewhere in the middle and have a few things to practice now that we are home. Our menu was all fresh local in season food, and was one of the best meals we had on our entire trip. Fabio and his wife are amazing and we cannot recommend taking this class enough!

We spent 9 days in three cities in Italy, and our evening with Fabio & Christiane was one of the highlights of our trip. We had so much fun cooking and talking, eating and enjoying wine!

Our experience in Fabio and Christiane’s lovely home surrounded by olive trees was unforgettable and definitely the highlight of our culinary trip.
The food, the wine, the conversation, and of course, the music (still listening to Savage Daughter 😄) was an incredible experience - one that I will remember for years to come. Even meeting one of their kitties was special 😽.
Chef Fabio’s passion for food and use of local ingredients is what I envisioned the quintessential Italian Chef would encompass. I never imagined myself eating anchovy bruschetta but I can still taste those lovely delicate flavors. The Clam risotto, salt cod and tiramisu were a symphony on my palate - Fabio was even so kind as to share the recipes. Each course was served with wine produced and bottled by friends (doesn’t get any more local than that).
If you are a “foodie” or just love local experiences, a visit to Chef Fabio and Christiane’s is a “must”. It will be the highlight of your trip!
